L’alumnat de les mat\u00e8ries Reptes Cient\u00edfics, de 1r i 2n de Batxillerat, i de Qu\u00edmica de 2n, han participat aquesta setmana en un taller impartit per les professionals de l\u2019Escola Agr\u00e0ria del Pallars. Tots ells han pogut con\u00e8ixer les funcions dels additius i la codificaci\u00f3 d\u2019aquests als productes alimentaris.<\/p>\n

\"Taller<\/a><\/p>\n

La part pr\u00e0ctica ha consistit en la realitzaci\u00f3 d\u2019esferificacions amb mermelada de pr\u00e9ssec. Per fer-ho, han agafat alginat de sodi, que ha reaccionat amb clorur c\u00e0lcic. Mitjan\u00e7ant una xeringa els joves han anat fent boletes i les han tret cada tres segons. Posteriorment tamb\u00e9 han fet altres esferificacions amb iogurt i han elaborat llaminadures amb suc de poma.<\/p>\n
