Durant la confer\u00e8ncia, el ponent va fer un recorregut per la hist\u00f2ria dels perfums i les aromes, i va introduir els assistents en els detalls del proc\u00e9s de creaci\u00f3 en el laboratori de les mol\u00e8cules del tipus \u00e8ster que s\u00f3n les responsables de les frag\u00e0ncies o dels sabors i aromes de les fruites.
