A Catalunya la tradici\u00f3 mana menjar castanyes i fer Panallets. Un cop toves, s\u2019escorren i es pelen. Es prepara un pur\u00e9 mentre encara s\u00f3n calentes, aixafant-les b\u00e9 amb la forquilla. Es deixa refredar el pur\u00e9 completament. S\u2019afegeix el sucre i l\u2019ametlla m\u00f2lta , i es barreja b\u00e9 amb la forquilla, fins que quedi ben uniforme. S\u2019acaba d\u2019amassar amb les mans \u00a0i es deixa reposar a la nevera .<\/p>\n<p>A continuaci\u00f3 es divideix la massa en 3 parts:<\/p>\n<p>&#8211; <u>Panellets de coco<\/u>: s\u2019afegeix 100g de coco ratllat a la massa i es treballa b\u00e9 amb les mans fins que quedi ben uniforme. Es van agafant boletes i se\u2019ls hi d\u00f3na forma de pir\u00e0mide amb els dits. Amb un pinzell, es pinta la part de dalt del panellet amb una mica de rovell d\u2019ou batut.<\/p>\n<p>&#8211; <u>Panellets d\u2019ametlles:<\/u> es fan barretes rectangulars (tipu croquetes) i es passen per la clara d\u2019ou (batuda una mica). Es posen les ametlles en un plat (uns 250 g) i s\u2019arrebossen els panellets. Es pinten amb un pinzell per la part de dalt amb una mica de rovell d\u2019ou batut.<\/p>\n<p>&#8211; <u>Panellets de pinyons<\/u>: es fan boles i es passen per la clara d\u2019ou (batuda una mica). Es posen els pinyons en un plat (uns 200 g) i s\u2019arrebossen els panellets. S\u2019ha de pressionar bastant perqu\u00e8 no caiguin i, si es veuen forats, es posen els pinyons individualment per tapar-los. Es pinten amb un pinzell per la part de dalt amb una mica de rovell d\u2019ou batut.<\/p>\n<p>Els panellets es posen a la safata del forn (amb paper de forn perqu\u00e8 no s\u2019enganxin) abans de pintar-los.
