Van ser dies on vam anar molt enfeinats doncs vam estar recollint moltes mostres i fent tots els controls necessaris per a saber la maduraci\u00f3 del ra\u00efm. No ens ha passat per alt ni un sol dia el control de la fermentaci\u00f3 dels nostres vins blancs i negres (amb controls de les propietats organol\u00e8ptiques, temperatura i densitat).\u00a0 A m\u00e9s, per tal d\u2019aprendre les implicacions que tenen els diferents additius enol\u00f2gics (com els llevats, els sulfits i els nutrients) hem fet proves a diferents dosis que ens permetran entendre com funcionen i veure\u2019n les difer\u00e8ncies.<\/p>\n<p lang=\"ca-ES\">I ara, un cop fet el desfangat, toca, anar controlant el vi amb els an\u00e0lisis enol\u00f2gics pertinents. Estem contents de la feina feta!
