L\u2019empresa gironina prove\u00efdora de caf\u00e8s va n\u00e9ixer l\u2019any 1920 fruit de l\u2019aventura industrial dels germans Cornell\u00e0 que posaren en marxa la primera planta de torrefacci\u00f3 a Girona. La paraula barista t\u00e9 els seus or\u00edgens en la llengua italiana i defineix un dels professionals m\u00e9s importants en el sector de l\u2019hostaleria, que mitjan\u00e7ant unes t\u00e8cniques, despr\u00e8n passi\u00f3 i \u00e9s capa\u00e7 de transformar l\u2019aroma del caf\u00e8 en beguda.<\/p>\n\n\n\n<p>Caf\u00e8s Cornell\u00e0 t\u00e9 un sistema integral de qualitat, anomenat S.I.Q., que garanteix que el gra que serveixen sigui un caf\u00e8, net, fresc i en perfectes condicions, perqu\u00e8 traslladi tota l\u2019aroma en una tassa de caf\u00e8. Un sistema de millora cont\u00ednua que comen\u00e7a per una qualitat constant, una formaci\u00f3 barista progressiva, un manteniment preventiu de la maquin\u00e0ria i culmina quan el client \u00e9s conscient que amb aquest sistema millora la seva rendibilitat.<\/p>\n\n\n\n<p>Un dels aspectes que ens va quedar m\u00e9s clar \u00e9s que el barista ha de con\u00e8ixer el seu caf\u00e8 i ha de saber com treballar-lo. \u00c9s important saber que un percentatge elevat de la qualitat del caf\u00e8 que s\u2019ofereix dep\u00e8n de la persona que el fa i tamb\u00e9 cal tenir en compte que el millor caf\u00e8 \u00e9s aquell que es mol i es fa al moment.<\/p>\n\n\n\n<p>Estem molt contents d\u2019aquesta visita, entre moltes d\u2019altres coses hem apr\u00e8s que el caf\u00e8 s\u2019oxida, que la llum del sol l\u2019afecta i que el clima i la temperatura s\u00f3n factors que fan variar el gust i la qualitat del producte.<\/p>\n\n\n\n<p>Per acabar amb l\u2019explicaci\u00f3, l\u2019Imma ens va fer entrar en pr\u00e0ctica endinsant-nos en \u201cl\u2019art-latte\u201d, una famosa t\u00e8cnica de presentaci\u00f3 de caf\u00e8s que, a m\u00e9s de ser vistosa, aporta un toc crem\u00f3s i delici\u00f3s a aquesta beguda.
