L’alumnat de 3r d’ESO hem realitzat un taller d’esferificacions a la Universitat de LLeida, UdL- ETSEA durant la setmana de la ci\u00e8ncia. Hem aconseguit encapsular aliments en forma d’esferes i fideus a trav\u00e9s d\u2019un proc\u00e9s d\u2019esferificaci\u00f3 amb alginat, polisac\u00e0rid extret a partir d\u2019algunes algues marines brunes. En aquesta pr\u00e0ctica hem apropat la ci\u00e8ncia al nostre alumnat i aplicat la qu\u00edmica als aliments encapsulant sabors tal i com ho fan els professionals.<\/p>\n
