He estat fent pr\u00e0ctiques en una pastisseria del poble Maisons Martius i he apr\u00e8s molt. Una de les coses que he apr\u00e8s \u00e9s a perfeccionar la Fraisier.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Per fer la Fraisier hem de fer dos tipus de <\/span><i><span style=\"font-weight: 400;\">G\u00e9noise;<\/span><\/i><span style=\"font-weight: 400;\"> una de gerds i un altre de festucs. Per fer la <\/span><i><span style=\"font-weight: 400;\">G\u00e9noise framboise<\/span><\/i><span style=\"font-weight: 400;\"> posarem 9 ous sencers, 6 gotes de colorant vermell i 250\u202fg de sucre, ho batrem amb unes &#8220;varilles&#8221; en una cassola sobre el foc. Quan estiguin calentes (hem d&#8217;assegurar-nos no parar de batre perqu\u00e8 no volem que l\u2019ou es cuini) ho posem en una batedora i els batem b\u00e9 fins que estiguin muntades. Quan estigui muntada, afegirem 200 g de farina i 50 g de mid\u00f3. Posem la mantega a fondre i els encenalls de gerds i ho posem tot a la m\u00e0quina per tal que s\u2019integri. Posem la barreja en una placa i s\u2019expandeix per tal que quedi una planxa.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Per fer la <\/span><i><span style=\"font-weight: 400;\">G\u00e9noise pistache<\/span><\/i><span style=\"font-weight: 400;\"> farem b\u00e0sicament el mateix, per\u00f2 canviarem les 6 gotes de colorant per 40 g de crema de festuc i els encenalls de gerds per 20 g de trossets de festucs.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Quan ja estiguin cuites i fredes les <\/span><i><span style=\"font-weight: 400;\">g\u00e9noise,<\/span><\/i><span style=\"font-weight: 400;\"> posarem la de festucs a sota del tot i posarem una capa de crema de vainilla (bastant quantitat) i quan estigui ben estesa, a sobre posarem maduixes senceres que cobreixin tota la planxa.
