En aquesta darrera xerrada d&#8217;emprenedoria, el nostre convidat ens va explicar com a partir del seu inter\u00e8s per la permacultura i l&#8217;inter\u00e8s del seu soci per la cultura japonesa van decidir posar en marxa aquest negoci. Fins fa 15 anys, el wasabi nom\u00e9s es produia\u00a0al Jap\u00f3 i en unes condicions\u00a0 clim\u00e0tiques i de s\u00f2l molt espec\u00edfiques i exigents. La informaci\u00f3 entorn al complexe conreu d&#8217;aquesta planta era tot un misteri i poques empreses fora del Jap\u00f3 s&#8217;hi havien atrevit. Despr\u00e9s d&#8217;un llarg per\u00edode\u00a0d&#8217;aprenentatge i tenint en compte que el wasabi tarda dos anys a donar un fruit no massa abundant, Yamaaoi\u00a0va tenir la seva primera &#8220;collita&#8221;. A partir d&#8217;aquest moment les millores que s&#8217;han anat implementant han donat lloc a un producte de molt alta qualitat. Degut a la situaci\u00f3 actual (COVID) l&#8217;empresa es troba en una situaci\u00f3 d'&#8221;stand by&#8221; tot i que ja tenen noves propostes en ment orientades a diversificar la seva oferta amb altres plantes de la cuina japonesa.<\/p>\n<p>La xerrada es va concloure amb un &#8220;tast&#8221; de wasabi, ratllat de forma tradicional amb un ratllador de pell de taur\u00f3 i oxigenat amb un pinzell. I vam poder comparar-lo amb el &#8220;wasabi&#8221; que habitualment mengem aqu\u00ed i que no \u00e9s res m\u00e9s que rabe picant i mostassa amb tint verd.
