La textura del mel\u00f3s de porc \u00e9s tendre, melosa i es desf\u00e0 a la boca. El seu sabor intens contrasta amb el de la poma de Girona que t\u00e9 una textura cruixent i un gran atractiu visual. La poma de Girona \u00e9s una indicaci\u00f3 geogr\u00e0fica protegida (<span class=\"hiddenSpellError\">IGP<\/span>) per a les pomes produ\u00efdes als termes municipals de les comarques catalanes de la Selva, el Baix Empord\u00e0 i l&#8217;Alt Empord\u00e0, el Giron\u00e8s i el Pla de l&#8217;Estany. Les condicions clim\u00e0tiques del s\u00f2l espec\u00edfiques d&#8217;aquesta zona confereixen a les pomes les seves caracter\u00edstiques diferencials. Les pomes emparades sota aquesta\u00a0<span class=\"hiddenSpellError\">IGP<\/span>\u00a0han estat conreades d&#8217;acord amb les normes de producci\u00f3 integrada per a pomes, amb m\u00e8todes que respecten la salut humana i el medi ambient, i es recullen quan l&#8217;estat de maduresa del fruit \u00e9s l&#8217;adequat. El vi ranci que hi afegim ens aporta molts matisos al plat, t\u00e9 acidesa, un punt d&#8217;oxidaci\u00f3 interessant i, a m\u00e9s, \u00e9s dolcenc.
