Els grecs van introduir la t\u00e8cnica de la conservaci\u00f3 de la sala\u00f3 i posteriorment els romans van continuar amb aquest art de salar i avui en dia encara es mant\u00e9. Cal distingir entre anxova i seit\u00f3. L&#8217;anxova \u00e9s el producte tractat i el seit\u00f3, el peix fresc, tot i que tamb\u00e9 s&#8217;anomena seit\u00f3 el peix fresc macerat amb vinagre i conservat en oli. Pel que fa a l&#8217;anxova, per fer-ne la sala\u00f3 s&#8217;utilitzen anxoves fresques, sal, herbes arom\u00e0tiques i esp\u00e8cies. Hi ha dos m\u00e8todes d&#8217;elaboraci\u00f3: en salmorra (amb sal i aigua salada) i en oli (l&#8217;anxova primer es dessala i despr\u00e9s es conserva en oli). El proc\u00e9s de maduraci\u00f3 en ambd\u00f3s casos \u00e9s de vuit mesos.<\/p>\n<p style=\"text-align: justify;\">A l&#8217;Escola d&#8217;Hostaleria de Lloret de Mar, sempre que podem, escollim les anxoves de l&#8217;Escala, perqu\u00e8 s\u00f3n molt arom\u00e0tiques i saboroses, amb un gust persistent.
