La <em>vichyssoise<\/em> \u00e9s una sopa cremosa de blanc de porros, patates, cebes, nata i aigua o brou. Es distingeix del pur\u00e9 de porro en el fet que \u00e9s m\u00e9s l\u00edquida.<\/p>\n<p style=\"text-align: justify;\">El segon aperitiu \u00e9s el pop a la gallega <em>a la nostra manera<\/em>. Tot i que \u00e9s un plat tradicional de Gal\u00edcia i b\u00e0sic en la seva gastronomia, nosaltres en fem la nostra pr\u00f2pia versi\u00f3 per sorprendre el comensal.<\/p>\n<p style=\"text-align: justify;\">Pel que fa als dos entrants, el primer \u00e9s la coca d&#8217;escalivada amb anxoves de l&#8217;Escala i olivada d&#8217;oliva aragonesa, una coca que proporciona subtils notes d&#8217;hortalisses i de l&#8217;umami de l&#8217;anxova, en una deliciosa fusi\u00f3 mediterr\u00e0nia.\u00a0El segon entrant \u00e9s un remenat d&#8217;ou amb alls tendres, esp\u00e0rrecs, bolets i botifarra. En aquest plat, la suavitat de l&#8217;ou dansa amb els aromes de les verdures i la del\u00edcia r\u00fastica de la botifarra.<\/p>\n<p style=\"text-align: justify;\">El rei del men\u00fa, \u00e9s, sens dubte, el bacall\u00e0 amb mussolina d&#8217;all i t\u00e0rtar d&#8217;hortalisses. El bacall\u00e0, sublimat per la mussolina d&#8217;all, es converteix, gr\u00e0cies a la frescor del t\u00e0rtar, en una suculenta obra culin\u00e0ria.<\/p>\n<p style=\"text-align: justify;\">Seguidament, servim, el mel\u00f3s de porc amb poma de Girona i reducci\u00f3 de vi ranci. El porc proporciona una melositat \u00fanica a la carn, que, entrella\u00e7ada amb la dol\u00e7or de la poma de Girona i banyada en una reducci\u00f3 de vi ranci, ens proporciona una fusi\u00f3 ostensiblement elegant, de manera que el men\u00fa culmina en una experi\u00e8ncia gustativa sublim.<\/p>\n<p style=\"text-align: justify;\">Les postres s\u00f3n un full de crema amb fruita. L&#8217;\u00e8xtasi dol\u00e7 d&#8217;un full cruixent, abra\u00e7at per la suavitat d&#8217;una crema celestial, amb la frescor de la fruita.
