L&#8217;escabetx \u00e9s una de les receptes de tradici\u00f3 oral entre els pescadors, tal com ho va recollir Ferran Agull\u00f3 al <em>Llibre de la cuina catalana<\/em>, publicat l&#8217;any 1928:<\/p>\n<blockquote>\n<p style=\"text-align: justify;\"><em>Peix escabetxat. Per la costa, els dies que el peix \u00e9s abund\u00f3s i, per tant, a bon preu, s\u2019escabetxa\u2026 Els millors peixos per escabetxar s\u00f3n: sardina, verats, d\u00e9ntol, nero, llu\u00e7 i tonyina\u2026 Fregit es posa en una plata fonda i s\u2019hi tira per sobre sajolida, farigola i fulles de llorer, regant-ho amb l\u2019oli sobrer de la paella, al que s\u2019hi ajunta un raig de vinagre fort\u2026 Si hi ha molt de peix, es posa a sostres separats per les herbes, per\u00f2 sempre curant que tot quedi ben cobert d\u2019oli i vinagre<\/em>.<\/p>\n<\/blockquote>\n<p style=\"text-align: justify;\">Nosaltres hem escabetxat el musclo i n&#8217;hem aprofitat el suc per fer la maionesa.
