Segurament per aix\u00f2 va captivar la Ruth, la xef de la setmana a l&#8217;Escola d&#8217;Hostaleria de Lloret de Mar, i segurament per aix\u00f2 tamb\u00e9, actualment \u00e9s la base de les seves elaboracions de cuina.<\/p>\n<p style=\"text-align: justify;\">Inicialment, el sushi era una barreja fermentada d&#8217;arr\u00f2s i vinagre que servia per conservar el peix i, de fet, nom\u00e9s se&#8217;n menjava aquest \u00faltim, fins que els habitants d&#8217;<span class=\"hiddenSpellError\">Edo<\/span>, l&#8217;antic T\u00f2quio, van comen\u00e7ar a menjar-se el peix cru, tamb\u00e9 amb l&#8217;arr\u00f2s. En l&#8217;actualitat, aquesta recepta consisteix en petites croquetes d&#8217;arr\u00f2s amb un tall de peix cru al damunt, o en rotllets d&#8217;arr\u00f2s farcits i amb un embolcall d&#8217;algues.<\/p>\n<p style=\"text-align: justify;\">La proposta de sushi que la nostra xef ha incl\u00f2s en el men\u00fa de degustaci\u00f3 \u00e9s un entrant elaborat amb salm\u00f3 i alvocat.<\/p>\n<p style=\"text-align: justify;\">El sushi no \u00e9s l&#8217;\u00fanica incursi\u00f3 de la cuina japonesa al men\u00fa; els comensals tamb\u00e9 poden tastar les crestes, anomenades sovint <em>gyozes<\/em>, que la Ruth ens presenta com a plat principal. Es tracta de petits panadons farcits que tenen una textura molt peculiar, consistent per fora i tendra i sucosa per dins, donat que\u00a0passen\u00a0per la planxa i s&#8217;acaben al vapor.
