De totes maneres, nosaltres l&#8217;hi incloem perqu\u00e8 dona al trinxat un extra de sabor i textura. La senzillesa de la recepta tradicional explica com era de dif\u00edcil viure en un passat no tan lluny\u00e0, sobretot a la muntanya, on la cuina \u00e9s contundent i poc variada. Els plats densos ajuden a fer passar el fred: rostits, estofats, escudelles, etc. Als Pirineus no hi creix gaire varietat de verdures ni hortalisses, a difer\u00e8ncia del que passa a terres m\u00e9s baixes i c\u00e0lides. Curiosament, per\u00f2, la col i la patata aguanten molt b\u00e9 el fred i es poden cultivar a les terres pirinenques, si b\u00e9 \u00e9s cert que la patata es cultiva sobretot durant l&#8217;estiu suau de muntanya i que la col d&#8217;hivern de la Cerdanya, que tradicionalment es cultivava als horts dom\u00e8stics, tot i la seva resist\u00e8ncia a condicions climatol\u00f2giques extremes, t\u00e9 una producci\u00f3 molt limitada.
