Aquest proc\u00e9s es repeteix dues o tres vegades durant el cultiu, fins a aconseguir una part blanca prou llarga (entre 15 i 25 cm).<\/p>\n<p style=\"text-align: justify;\">Quant a la salsa que acostuma a acompanyar els cal\u00e7ots, \u00e9s tan indispensable que tothom la coneix amb el nom de salsa de cal\u00e7ots, tot i que hi ha qui t\u00e9 per costum anomenar-la romesco, obviant les subtils difer\u00e8ncies que hi poden haver entre una i altra.<\/p>\n<p style=\"text-align: justify;\">Com d\u00e8iem al comen\u00e7ament, la proposta de cal\u00e7ot del nostre men\u00fa es troba a l&#8217;aperitiu; per\u00f2, tot i estar pensada nom\u00e9s per obrir boca, fa honor a all\u00f2 que els amants dels cal\u00e7ots hi esperen trobar.
