Enguany hem passat una molt bona estona de ci\u00e8ncia i xocolata gr\u00e0cies al Claudi Mans.<\/b><\/p>\n<p style=\"text-align: justify;\"><b>En Claudi <\/b><span style=\"font-weight: 400;\">\u00e9s <\/span><b>catedr\u00e0tic em\u00e8rit d\u2019Enginyeria Qu\u00edmica de la Universitat de Barcelona <\/b><span style=\"font-weight: 400;\">i ens ha presentat el seu darrer llibre <\/span><b>\u201cLa textura de la xocolata\u201d <\/b><span style=\"font-weight: 400;\">Seguint una estructura cl\u00e0ssica de l&#8217;aproximaci\u00f3 a un aliment. Des de l\u2019an\u00e0lisi d\u2019etiquetes (una de les seves grans passions) a com veur\u00edem la xocolata al microscopi, quin \u00e9s el Nutriscore de la xocolata, qu\u00e8 \u00e9s el &#8220;fat bloom&#8221;, com s\u00f3n els cristalls de la mantega de cacau i on hi ha les reaccions de Maillard a la xocolata.<\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"font-weight: 400;\">A m\u00e9s ens ha explicat com va treballar per transformar Torribera en un campus universitari, avui dia referent de la Nutrici\u00f3 i gastronomia amb mirada cient\u00edfica de tot l\u2019Estat i orgull de la ciutat.<\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"font-weight: 400;\">Per acabar, hem fet una degustaci\u00f3 de diferents porcions de xocolata per tal descobrir les propietats de la xocolata tal com treballen les disciplines de les ci\u00e8ncies sensorials o ci\u00e8ncies gastron\u00f2miques.<\/span><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-9377\" src=\"https:\/\/agora.xtec.cat\/iesnumancia\/wp-content\/uploads\/usu2267\/2025\/11\/1000073639.jpg\" alt=\"\" width=\"800\" height=\"600\" \/><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Com cada edici\u00f3 de la Setmana, s\u2019organitza una activitat pels docents del centre.
