L\u2019estudi de la qu\u00edmica dels aliments, de la seva composici\u00f3 i transformacions han perm\u00e8s a alguns famosos cuiners utilitzar escumes, aires o nitrogen l\u00edquid per aconseguir noves experi\u00e8ncies gastron\u00f2miques.<\/span><\/span><\/span><\/p>\n<p align=\"justify\"><span style=\"color: #000000;\"><span style=\"font-family: Liberation Serif, serif;\"><span style=\"font-size: medium;\">Despr\u00e9s de la xerrada els alumnes van poder posar en pr\u00e0ctica la coneguda t\u00e8cnica de l\u2019esferificaci\u00f3 amb diferents aliments.<\/span><\/span><\/span><\/p>\n<p align=\"justify\"><span style=\"color: #000000;\"><span style=\"font-family: Liberation Serif, serif;\"><span style=\"font-size: medium;\">El professor Daniel S. ens va parlar tamb\u00e9 de seguretat aliment\u00e0ria, additius i de t\u00e8cniques de processament i conservaci\u00f3 d\u2019aliments mostrant-nos com la ci\u00e8ncia millora la nostra qualitat de vida amb exemples concrets.
