{"id":2781,"date":"2016-05-16T17:43:07","date_gmt":"2016-05-16T16:43:07","guid":{"rendered":"http:\/\/agora.xtec.cat\/ies-merce-rodoreda\/?p=2781"},"modified":"2016-05-17T18:07:04","modified_gmt":"2016-05-17T17:07:04","slug":"determinacio-olor-i-gust-pel-metode-agbar","status":"publish","type":"post","link":"https:\/\/agora.xtec.cat\/ies-merce-rodoreda\/modul-b\/determinacio-olor-i-gust-pel-metode-agbar\/","title":{"rendered":"Determinaci\u00f3 olor i gust pel m\u00e8tode Agbar"},"content":{"rendered":"<p>https:\/\/www.youtube.com\/watch?v=UoZmW9udXB8<\/p>\n<p>&nbsp;<\/p>\n<p style=\"text-align: justify;\">Vaig tenir la sort de poder realitzar les pr\u00e0ctiques de la FCT (Formaci\u00f3 en Centres de Treball) a un dels laboratoris m\u00e9s ben equipat i avan\u00e7at de l\u2019actualitat, al <a href=\"http:\/\/www.aiguesdebarcelona.cat\/ca\/control-de-la-calidad-laboratorio-\" target=\"_blank\">laboratori d&#8217;Aig\u00fces de Barcelona<\/a> a Collblanc. M\u00e9s concretament, treballava a l&#8217;\u00e0rea de qu\u00edmica, anomenada an\u00e0lisi d&#8217;aig\u00fces naturals de consum. Durant 6 mesos, vaig poder aplicar i aprofundir els coneixements que aprenia en els diferents cr\u00e8dits del cicle. Per exemple, entre d\u2019altres, realitzant volumetries o fent dilucions de patrons de concentraci\u00f3 coneguda, per despr\u00e9s analitzar-les instrumentalment mitjan\u00e7ant l&#8217;espectrofot\u00f2metre. B\u00e0sicament a la nostra secci\u00f3, analitz\u00e0vem i control\u00e0vem tots els contaminants inorg\u00e0nics que podien contenir les aig\u00fces naturals.<\/p>\n<p style=\"text-align: justify;\"><!--more--><\/p>\n<p style=\"text-align: justify;\">A m\u00e9s a m\u00e9s, una de les activitats que tamb\u00e9 realitzava era preparar i analitzar les mostres que havien d&#8217;analitzar els panelistes del panell de gustos i olors. El m\u00e8tode d&#8217;<a href=\"http:\/\/www.aiguesdebarcelona.cat\/ca\/web\/web-aguas-de-barcelona\/inicio\" target=\"_blank\">Aig\u00fces de Barcelona<\/a> \u00e9s un m\u00e8tode propi, caracter\u00edstic i diferent de la resta de m\u00e8todes per analitzar el gust i l&#8217;olor. Tamb\u00e9 \u00e9s conegut amb el nom de FPA (<a href=\"https:\/\/www.standardmethods.org\/store\/ProductView.cfm?ProductID=54\" target=\"_blank\"><strong><em>Flavor Profile Analysis<\/em><\/strong><\/a>). Aquest m\u00e8tode utilitza un grup de 4, 5 o 6 panelistes per examinar les caracter\u00edstiques sensorials de les mostres d&#8217;aigua. El gust es determina tastant i esbandint la boca amb la mostra a analitzar. Per altra banda, l&#8217;olor \u00e9s determinat ensumant la mostra. L\u2019an\u00e0lisi es basa en una roda d&#8217;olors i gustos que relaciona els atributs de les mostres amb els components que poden generar aquella olor o gust. \u00c9s indispensable que cada panelista hagi estat format pr\u00e8viament. La formaci\u00f3 serveix perqu\u00e8 tots els panelistes descriguin una mateixa percepci\u00f3 de la mateixa manera. L&#8217;entrenament i formaci\u00f3 dels panelistes es realitza utilitzant patrons est\u00e0ndard de refer\u00e8ncia.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\" aligncenter\" src=\"http:\/\/www.percepnet.com\/img\/figuras\/fig11_devesa.jpg\" alt=\"\" width=\"417\" height=\"419\" \/><\/p>\n<p>&nbsp;<\/p>\n<p style=\"text-align: justify;\">Primerament, els panelistes anoten les seves percepcions de manera individual. Els resultats individuals s\u00f3n importants, ja que poden desvelar un canvi o l&#8217;aparici\u00f3 d&#8217;una nova olor o gust. Tot i aix\u00ed, el resultat final es fa en consens considerant les percepcions de tots els panelistes. La temperatura afecta en la intensitat de l&#8217;olor. En la majoria de compostos, l&#8217;olor augmenta a mesura que augmenta la temperatura perqu\u00e8 hi haur\u00e0 m\u00e9s mol\u00e8cules de les subst\u00e0ncies odor\u00edferes que es volatilitzaran. Aix\u00ed doncs, l&#8217;an\u00e0lisi de l&#8217;olor es fa a 45\u202f\u00b0C, ja que la intensitat ser\u00e0 major i ser\u00e0 m\u00e9s f\u00e0cil fer la detecci\u00f3 que si es fes a 25\u202f\u00b0C. En canvi, el gust es realitzar\u00e0 a 25\u202f\u00b0C perqu\u00e8 si es fes a 45\u202f\u00b0C, es podrien lesionar les papil\u00b7les gustatives. A banda de la temperatura, tamb\u00e9 es diferencien per la quantitat de mostra que es necessita per realitzar l&#8217;an\u00e0lisi. Per a l&#8217;olor, s&#8217;utilitzen 200 mL de mostra que es dipositen en un Erlenmeyer de 500 ml perqu\u00e8 hi hagi suficient espai per a les part\u00edcules vol\u00e0tils. Era el primer contacte que tenia amb el m\u00f3n laboral i ha sigut molt positiu. Des del primer dia, m\u2019han fet sentir com un m\u00e9s i han dipositat tota la confian\u00e7a en mi.
