La jornada va reunir professionals de diversos sectors interessats a aprofundir en l\u2019univers del cacau de la m\u00e0 d\u2019un dels grans referents actuals de la pastisseria.<\/p>\n<p>Durant la sessi\u00f3, Crusellas va compartir la seva experi\u00e8ncia i la seva manera d\u2019entendre la xocolata, no nom\u00e9s com un ingredient, sin\u00f3 com una eina d\u2019expressi\u00f3 creativa. Amb un enfocament proper i did\u00e0ctic, els participants van descobrir les diferents proced\u00e8ncies del cacau, la import\u00e0ncia de l\u2019origen de la fava i la tra\u00e7abilitat que acompanya tot el proc\u00e9s, des del cultiu fins al producte final.<\/p>\n<p>El curs tamb\u00e9 va servir per introduir els assistents en les bases t\u00e8cniques de la xocolata. A partir d\u2019aquesta aproximaci\u00f3, es van elaborar diferents productes que van permetre analitzar-ne les possibilitats, aix\u00ed com identificar els punts forts i les limitacions d\u2019un ingredient tan complex com fascinant.<\/p>\n<p>La jornada es va completar amb un tast de productes d\u2019Eukarya, la marca de xocolates impulsada per Crusellas.
