Ha combinat sessions<strong> te\u00f2riques i pr\u00e0ctiques <\/strong>centrades en l\u2019optimitzaci\u00f3 dels processos culinaris, des de la selecci\u00f3 dels ingredients fins a la presentaci\u00f3 final del plat.<\/p>\n<p>Durant la formaci\u00f3, l\u2019alumnat ha treballat aspectes com la<strong> gesti\u00f3 del rostir lent i controlat<\/strong>, la <strong>preparaci\u00f3 de farses equilibrades<\/strong>, les <strong>t\u00e8cniques de cocci\u00f3 de la pasta dels canelons<\/strong> i la <strong>creaci\u00f3 de croquetes innovadores<\/strong> sense perdre l\u2019ess\u00e8ncia tradicional. Tamb\u00e9 s\u2019han introdu\u00eft <strong>arrebossats alternatius i creatius<\/strong>, com el <strong><em>panko<\/em><\/strong>, els <strong><em>airbags<\/em> de patata<\/strong> i altres opcions per obtenir textures cruixents i atractives.<\/p>\n<p>Segons<strong> Sergi Altarriba<\/strong>, director del centre i coordinador de la formaci\u00f3, \u201caquesta jornada ha perm\u00e8s als participants redescobrir el potencial dels plats m\u00e9s tradicionals a trav\u00e9s de noves t\u00e8cniques i enfocaments creatius, mantenint sempre la connexi\u00f3 amb la cuina de proximitat i el respecte pel producte\u201d.<\/p>\n<p>L\u2019objectiu principal del curs ha estat <strong>actualitzar i perfeccionar els coneixements t\u00e8cnics<\/strong> <strong>dels professionals<\/strong>, tot posant en valor el producte local i la cuina artesanal com a eixos de qualitat gastron\u00f2mica i identitat territorial.<\/p>\n<p>\u201cLa cuina no t\u00e9 dreceres. Cal rostir la carn de manera tradicional, treballar amb una bona mat\u00e8ria primera i, sobretot, tenir paci\u00e8ncia. \u00c9s aix\u00ed com es feia antigament, i com s\u2019hauria de continuar fent.\u201d, ha destacat <strong>Casellas<\/strong>.<\/p>\n<p>Amb una <strong>alta participaci\u00f3 i una valoraci\u00f3 molt positiva<\/strong>, aquesta formaci\u00f3 reafirma el nostre comprom\u00eds amb la <strong>formaci\u00f3 cont\u00ednua i l\u2019excel\u00b7l\u00e8ncia professional<\/strong> dins el sector agroalimentari, oferint cursos pr\u00e0ctics i adaptats a les
